High-Protein Maple & Seed Porridge
Ingredients
- 1/4 cup (36g) raw sunflower seeds
- 2 tbsp (22g) golden flaxseeds
- 1/2 cup (40g) rolled oats
- 2 scoops protein powder
- 1 tsp cinnamon
- 1 cup (240g) unsweetened vanilla almond milk
- 1/2 cup (75g) fresh blueberries
- 2 tbsp maple syrup
Directions
In a high-speed blender or clean coffee mill, coarsely grind the sunflower seeds and flaxseeds. Transfer to a small saucepan. Add the oats, protein powder, and cinnamon, stirring to combine. Stir in the almond milk and 1 cup water.
Cook over medium-high heat, stirring frequently, until the mixture comes to a boil. Reduce the heat to low and cook, stirring, until thickened, about 5 minutes. If you prefer a thinner consistency, stir in additional water to taste.
Divide the porridge between 2 bowls and top with the blueberries and maple syrup.
